For a basic sponge mix for 4 people use:

100g butter
100g caster sugar
2 eggs
100g self raising flour

Grease a 1.25L (2pt) pudding basin.
Cream butter & sugar in a mixing bowl and gradually beat in the eggs.
Stir in the flour, and then turn mixture into prepared basin.

(If you want to flavour the sponge mix you could replace some of the flour with cocoa or add some orange or lemon zest; alternatively put about 3 tbsps of syrup or jam in the bottom of the basin and then put the mixture on top; pineapple rings at the bottom work well too!)

Cook on full power for 5min if plain, or 6 min if using syrup, jam, pineapple etc.

Allow to stand for a min or 2, then turn out onto a warmed plate.

Beware - leave space in the basin - they really rise, and they are VERY VERY HOT when they come out!
