Wild camping is great fun. Although I haven't done it for some years now, I've had some amazing trips in the highlands of Scotland and the north of England in the past spending up to a week in 'the wilds' under canvas.
On Tenerife, you don't have to camp in the National Park boundary, there are plenty of remote places outside of it where you can pitch a tent. I've often seen tents discreetly pitched in places like the Anaga mountains in the north. It is probably 'technically' illegal but it is in England as well and that doesn't stop people. You are hardly likely to get someone patrolling the mountains in the dark looking for tents! The main problem in Tenerife, as the link suggests is a supply of water. You can only realistically carry enough for one day.
